Healthy Cooking - Fruit Crumble

Filling:

Crumble:

250g cooking apples

150g plain flour

100g blackberries

90g brown sugar

½ teaspoon cinnamon

100g unsalted butter

25g brown sugar (if required)


Method:

  • Preheat oven to 180*C

  • Peel and cut fruit into small pieces. Place into an oven dish. Sprinkle with sugar and cinnamon and mix well.

To make the crumble:

  • Place the flour and sugar into a bowl. Add the butter and rub it in with your fingertips until it resembles breadcrumbs

  • Sprinkle the mixture on top of the fruit.

  • Bake in the oven for approximately 30 minutes until the crumble has browned and the fruit is bubbling.

Alternatives:

You can use a mixture of any fruit you like – pears, sultanas, rhubarb, blueberries or strawberries. You could flavour your crumble with ginger or lemon juice instead of cinnamon.

Instead of using plain flour you could use coconut flour for an added flavour or rice flour.

The brown sugar in the filling can be added if you want it – you do not have to use it.
